Great Tea Recipes: Banana Tea Muffins

Have you ever wondered what other things you can do with your tea besides steeping it and drinking it? If you’re an avid lover of tea, there may be times when you feel like doing something different with your favorite drink. Muffins are the perfect thing to eat with a cup of tea, but you can also use this tea recipe to make your muffins infused with tea!

Here is what you’ll need
1/2 a cup of margarine
6 ounces of sugar
2 eggs
1/2 cup of digestive bran
3 bananas, mashed
3 tablespoons of full cream milk powder
1/4 cup of chopped walnuts (optional)
1 cup of cold, earl grey tea
1 1/2 cups of self raising flour
2 teaspoons of salt
2 tablespoons of cinnamon
1 tablespoon of mixed spice

Preheat your oven to 350 degrees and steep your tea for up to five minutes and then set it aside so that it has time to cool. Next cream together your margarine and your sugar. Do this until it has a nice fluffy consistency. Next, beat your eggs in one at a time. Stir in the bran, milk powder, nuts, and mashed bananas.

Once all of these ingredients are mixed in together, use a separate bowl to mix one third of the tea and one third of the mixture. Continue to do this until all of the ingredients have been well blended.

Spoon your mixture into buttered or sprayed muffin pans (or use some cute muffin cups if you want to!) Let the muffins bake for about 25 minutes, until they begin to brown. When finished, let them cool slightly. Serve them warm with butter and have a nice hot cup of tea with it!
